This is a perfect salad for a summer meal.
In a large bowl, whisk together:
3 Tbsp rice vinegar 1 Tbsp canola oil and honey 1/4 tsp kosher salt
Add: 1 medium jicama, peeled and cut into matchstix, about 14 oz. 4 large radishes, cut into matchstix 3 scallions, thinly sliced Toss with one mango, peeled, pitted, and cut into matchstix 1/2 tsp salt
Mix all together and serve with 3 Tbsp roasted pepitos
Mix contents of the bowl, and top with 3 Tbsp roasted pepitas.
